As honey contains fructose & glucose, it does crystallise. In fact, raw honey crystallises faster than processed honey as it is richer in the above contents.
WHY DO LEADING BRANDS SELL PROCESSED HONEY?
Limited consumer insight and restricted transparency by brands is the major reason for lack of awareness about honey. This has created a gradual potential market for Processed Honey. One of the prime reasons backing processed honey is the process of ‘Crystallisation’. It is a natural process and is caused due to mismatch in Fructose (fruit sugar) & Glucose (grape sugar) levels. Seller is one who collects honey from different beekeepers and packs & sells honey to end customers. Honey collected by the beekeeper has different types and tastes and it all depends upon the nectar of flowers. Imagine, one bee keeper collected honey from mustard flower and another beekeeper collected honey from wild flower and when these 2 different types are mixed with each other do you think you get real honey? the answer would be NO.
Again, seller processes the honey to avoid crystallisation but that honey kills all enzymes, vitamins, fructose etc from honey and consumer will get only sugar syrup instead of honey.
